The baking cupboard by function: lift, thicken, set and ferment

A useful baking cupboard is easier to understand when it is organised by function. Some products release gas quickly, some build body in a liquid, some help fruit mixtures form a set, and others ferment dough over time. They may all appear in baking and preserving recipes, but they solve different problems and cannot be swapped simply because their names sound familiar.

Four products illustrate those jobs particularly well: baking soda for chemical lift, corn starch for thickening, liquid pectin for setting and dry yeast for fermentation. Understanding what activates each one is more valuable than memorising a long list of recipes.

Lift: Arm & Hammer Pure Baking Soda

Arm & Hammer Pure Baking Soda 454g is sodium bicarbonate. In baking, it reacts with acidic ingredients and releases carbon dioxide, which can help a batter or dough expand. It is not the same as baking powder: baking powder already contains acidic components, whereas baking soda normally depends on sufficient acidity elsewhere in the recipe.

This makes balance important. Adding extra baking soda is not a reliable way to create more lift. If there is not enough acid for it to react with, the finished food may retain an unpleasant alkaline taste. Once the wet and acidic ingredients meet the baking soda, work efficiently and follow the recipe’s mixing and baking instructions rather than leaving the batter standing unnecessarily.

Baking soda is also sold for a wide range of household uses, but keep the portion intended for food in a clean, dry food-storage area. Do not use a box for baking after it has been left open to absorb fridge odours or used around cleaning products.

Thicken: Argo Corn Starch

Argo Corn Starch 454g thickens when its starch is dispersed in liquid and heated. It is useful where a recipe needs more body in a sauce, soup, fruit filling, custard-style preparation or glaze without building that structure from wheat flour.

The key technique is dispersion. Adding dry corn starch directly to a hot liquid encourages the outside of each cluster to thicken before the inside has separated, producing lumps. Instead, mix it smoothly with a small quantity of cold liquid first, then stir that mixture into the warmer preparation as directed. Give it the heat and stirring time specified by the recipe so the starch can thicken evenly.

Corn starch is powerful in relatively small quantities, so it should not be treated as a one-for-one substitute for ordinary flour. Prolonged vigorous boiling, changes in acidity and repeated reheating can also alter the final texture. If a sauce becomes too firm, adjust with a little compatible liquid; if it remains thin, first confirm that it has reached the recipe’s required temperature before adding more starch.

Set: Certo Liquid Pectin

Certo Liquid Pectin 250ml is designed to help jams and jellies form a set. Pectin does not work in isolation: the type and ripeness of the fruit, acidity, sugar level, batch size, cooking time and the point at which the pectin is added all affect the result.

That is why preserving is a poor place for casual substitutions. Use a tested recipe written for liquid pectin and follow its quantities and order of operations. Do not automatically double a batch, drastically reduce the sugar or replace liquid pectin with powdered pectin while expecting an identical set. Those changes alter the balance of the formula and may require a specifically tested method.

A preserve can appear loose while still warm and continue to set as it cools, so judge it at the point stated in the recipe. If it remains soft, consult the manufacturer’s remedial guidance rather than repeatedly boiling it without a plan. Setting quality and food safety are separate matters: follow current tested preserving, jar preparation and storage guidance, and do not use appearance alone as proof that a preserve is safe.

Ferment: Caputo Lievito Dry Yeast

Caputo Lievito Dry Yeast 100g performs a slower and more controllable job. Yeast ferments dough over time, producing gas that can be retained by the dough’s structure. It is suited to leavened preparations such as pizza and bread, but it is not a direct substitute for baking soda.

Yeast performance depends on the whole dough environment. Temperature, time, flour, hydration, salt and the amount of yeast all influence fermentation. Follow the pack or a reliable recipe for dosage and method, particularly on whether the yeast should be mixed directly with flour or dispersed first. Very hot liquid can damage yeast, while a cold dough may simply need more time than the clock suggests.

Learn to read the dough as well as the timer. An under-fermented dough may feel tight and show little expansion. A dough pushed too far can become fragile, overly gassy or difficult to shape. Rather than adding much more yeast to speed everything up, manage dough temperature and allow an appropriate amount of time for the style you are making.

Choosing by the job in front of you

  • An acidic cake, biscuit or quick batter needs chemical lift: use baking soda only in the amount and balance specified by the recipe.
  • A liquid preparation needs more body: use corn starch with a cold-liquid dispersion step before heating.
  • A tested jam or jelly formula needs a reliable set: use the type of pectin named in that formula and preserve in the stated batch size.
  • A bread or pizza dough needs flavour and expansion through time: use yeast and control fermentation through dosage, temperature and rest.

The distinction also helps when troubleshooting. If bread has not risen, adding corn starch cannot fix fermentation. If a fruit filling is too runny, extra yeast is irrelevant. If a quick batter lacks acidity, more baking soda may worsen the flavour rather than improve the rise. Diagnose the missing function before reaching for another cupboard product.

Storage that protects performance

Moisture is the main enemy of dry baking soda and corn starch, so close their packs securely and use clean, dry utensils. Keep dry yeast tightly sealed and follow the label’s after-opening storage instructions, including refrigeration if specified. Store unopened and opened liquid pectin exactly as directed on its current packaging, and never use a pack that is damaged, leaking or outside the manufacturer’s guidance.

Date products when opened and retain their original labels or batch details. Ingredients and manufacturing information can change, and suitability should never be inferred from a product name alone. Always check the current pack for ingredients, allergens, cross-contact statements, storage and preparation directions, especially when cooking for someone with an allergy, intolerance or other dietary requirement.
